Green salad with pistachio dressing
A tasty French recipe. The vegetarian side dish contains the following ingredients: Pain Madeleine (cornbread stale), olive oil, pistachios, shallot (chopped), garlic (squeezed), lime (squeezed), Dijon mustard, dried thyme, friséesla (200 g), rucola salad (75 g) and cress (cut loose).

Extract the bread and grind into a fine crumb in a food processor. Fry 2 tbsp oil in frying pan. Breadcrumbs on low heat in 4 minutes crispy and golden brown, stirring occasionally. Peel pistachio nuts. Sprinkle skins and salt of nuts under cold running water.

In salad bowl dressing beat the rest of oil, shallot, garlic, lime juice, mustard and thyme. Season with salt and pepper. Fry, rucola, cress and pistachio mix through dressing. Sprinkle the breadcrumbed over it.
