Nice vegetarian on the BBQ, aubergines with oregano.

Directions

  1. Remove the aubergine crown and cut the aubergines lengthwise into 8-10 thin slices.
  2. Squeeze out the lemon. Mix the lemon juice with the oil. Add the dried oregano.
  3. Brush the eggplant slices on both sides with this mixture.
  4. Grill the aubergine on the braai approx. 3 minutes. Turn halfway. Lay on a scale.
  5. Pick the leaves of the parsley and cut finely. Sprinkle over the eggplant. Drizzle with oil and season with salt and pepper.
