Grilled white asparagus with saffron sauce

Cut off the bottom pieces of the peeled asparagus and cut the asparagus in the length.

Heat a grill pan and brush the pan lightly with a brush of oil. Put the half asparagus with the cutting edge downside down in the grill pan and grill them brown in a few minutes.

Turn around and grill for a few more minutes. Take them out of the pan and keep warm on a plate in a hot oven. Grill all asparagus.

Roast the almonds in a dry, hot frying pan until golden brown.

In the meantime, heat the sauce slowly and finish it by tapping in lumps of ice-cold butter. Do not let the sauce boil anymore.

Pour the sauce over the grilled asparagus and sprinkle with the almonds. Delicious with fish and baked potatoes.
