Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife.

Cut the flesh into pieces and put in the mortar.

Put the garlic in the mortar together with the sea salt. Mortar the pepper, garlic and salt into a smooth paste.

Cut the avocados half way through. Remove the seeds and scoop out the flesh with a spoon from the peel. Cut into pieces and put into the mortar.

Slice the pulp coarsely and mix with the pepper paste.

Halve the lime and squeeze the fruit. Add 3 tbsp juice and mix through the guacamole. Add more lime juice if necessary. Bon appétit! .
