Spicy strawberry chutney
Chutney of shallots, ginger, cardamom, strawberries, lemon, granulated sugar, salt and chili flakes.

Chop the shallots and peel and grate the ginger.

Heat the oil in a frying pan and fry the shallots, ginger and cardamom for 10 minutes on low heat.

In the meantime, clean the strawberries and cut them into 1 cm pieces.

Grate the yellow skin of the lemon and squeeze out the fruit.

Add the water with 3 tbsp lemon juice (for 8 people), the sugar and the salt to the shallots and let the sugar roast while stirring.

Add the strawberries and chilli flakes, turn the heat medium and cook for another 10 minutes. Change regularly.

Turn off the heat and scoop the lemon grater through. Allow to cool for about 1 hour.

Spoon the chutney into the clean container (or several small jars) and store in the fridge for a maximum of 1 week.
