Grilled green asparagus with red onion and almonds, suitable for vegans.

Cut the red onion in half and cut thin half rings. Cut the zucchini into slanted slices.

Put the onion in a bowl and add the red wine vinegar with some salt.

Cut approx. 3 cm from the woody underside of the asparagus. Cook the asparagus 5 minutes in water with salt. Drain and brush with oil.

Heat the grill pan and grill the asparagus in 4 min. Until done, turn regularly and put the asparagus in a bowl.

Grill the zucchini 5 minutes and turn halfway. Add the zucchini and the onion to the asparagus and spoon over.

Chop the almonds coarsely with a food processor. Sprinkle the vegetables with the olive oil and the coarsely chopped almonds.
