Halloumi chicken burger
Homemade burger of halloumi and minced meat on a multigrain roll with red onions, iceberg lettuce and cucumber.

Preheat the oven to 220 ° C. Fry the rolls according to the instructions on the package.

Meanwhile, heat the grill pan without oil or butter. Clean the lemon and grate the yellow skin.

Cut the halloumi into cubes of ½ cm and mix with 1 tsp lemon zest (per 4 people) and the chicken mince.

Make burgers from the minced meat. Cut the red onion into thick rings of 1 cm.

Grill the burgers in approx. 10 min. Until golden brown and done. Turn halfway. Grill the onion rings in the last 5 minutes. Turn halfway.

In the meantime, finely chop the garlic and put in a saucepan together with the dried fresh mint and the tomato frito.

Bring to the boil and simmer for 5 minutes on low heat.

Cut the cucumber into slices and cut open the buns.

Spread some of the sauce over the bottoms and top with the burger, slices of cucumber, some lettuce and the grilled onion. Serve the rest of the sauce.
