Pasta salad with ham, zucchini and peach


A pasta salad with parma ham, zucchini, peach and creamy mozzarella.

Directions

  1. Cook the pasta al dente according to the instructions on the package. Drain and rinse cold under running water.
  2. Meanwhile, grate the yellow skin of the lemon and press 1 half out. Cut the celery fine.
  3. Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife. Slice the flesh finely.
  4. Cut the courgettes into thin slices lengthwise. Brush with the oil.
  5. Cut the peaches along the kernel in half. Unscrew the halves in the opposite direction and remove the wick.
  6. Brush the cutting edges with the oil. Heat the grill pan without oil or butter and grill the zucchini 4 minutes. Turn halfway. Grill the peaches for 2 minutes on the cutting edge.
  7. Mix the lemon zest, 2 tbsp lemon juice, the red pepper, celery and oil into a dressing. Season with pepper and salt.
  8. Scoop with the pasta and spread over a large flat dish. Scoop the leaf lettuce through.
  9. Tear the mozzarella and parma ham into pieces and spread with the zucchini and peach over the salad. Sprinkle with pepper. Yummy! .
