Dab the meat dry with kitchen paper and cut it into 10 pieces. Sprinkle the hampen with pepper and salt. Sprinkle the flour on a plate.

Take the meat through the flour and beat off the excess flour.

Preheat the oven to 200 ° C.

Heat a dash of oil in a frying pan and fry the ham pen in 2-3 portions until golden brown.

Remove the meat from the pan and place it in the roasting pan. Insert the bay leaves in between.

Cut the onion into rings. Fry the onion rings in the shortening and distribute them over the meat. Pour in the wine and cover the roasting tin with aluminum foil.

Cook the ham pen in the preheated oven for approx. 45 minutes. Remove the ham pen with the onion from the roasting pan and keep approx. 400 g warm.

Allow the rest to cool down and store in the refrigerator until use. Place the roasting pan on the fire.

Allow the cooking liquid to reduce to the desired thickness (or pour the moisture into a saucepan). Season with pepper and salt.
