Directions

  1. Heat the oil with the butter and fry the ham, sprinkled with salt and pepper, golden brown. Remove the meat from the pan.
  2. Fry the shallots and garlic in the shortening. Pour the celeriac through and fry briefly.
  3. Sprinkle the flour over it and add the cream, stock, mustard and chopped sage.
  4. Place the meat in it and simmer for 25 minutes.
  5. Fry a few sage leaves in a little oil lightly crispy and put them on the dish for serving.
