Directions

  1. Finely chop the parsley, chives and dill.
  2. In a bowl, combine the oatmeal with the fresh herbs, mustard, salt and some freshly ground pepper.
  3. Mix 1/3 of the butter until it is evenly sticky.
  4. Rub the ham with salt and pepper and place in a roasting pan.
  5. Cover the top with the spice mixture and press it well.
  6. Slide the ham into the oven and switch the oven to 180 ° C. Roast the ham for 30 minutes.
  7. Peel the carrots and cut them together with the celery in 2 cm pieces.
  8. Then divide the carrots and celery around the ham and scoop them through the roast.
  9. Roast the ham and vegetables for 30-40 minutes.
  10. Take the roasting pan out of the oven and let the meat with the vegetables covered with aluminum foil rest for 5 minutes.
  11. Meanwhile, make the Hollandaise sauce: melt the remaining butter in a saucepan.
  12. In the high bowl, mix the egg yolks with the lemon juice and some salt and freshly ground pepper with the hand blender into a pale mixture.
  13. Pour the melted butter into it while mixing.
  14. Mix to a nice smooth yellow sauce, add 1-2 tablespoons of warm water if the sauce is too thick.
  15. Slice the ham in slices and place them on hot plates.
  16. Spoon the vegetables next to them and put a little sauce on the ham.
  17. Put the rest of the sauce in a sauce bowl on the table.
