Finely chop the parsley and dill. Cut the chives finely. Stir in a bowl the Greek yogurt with mayonnaise and mustard into a thick sauce. Add spoon for spoonful of mussel cooking water, but make sure the dip is not too thin. Finally, mix in parsley, chives and dill and season with salt and freshly ground pepper.

Spoon the herb dip into small dishes and serve with the mussels.
