Beat the eggs with the milk, salt and pepper for a few minutes. Heat the butter in a frying pan and pour in the egg mixture.

Let the omelette bake at high setting for a short while and loosen the edges with a spatula. Shake the pan while the omelet is cooking to get air in the omelette.

Sprinkle with fresh garden herbs and scoop up the mascarpone. Fold the omelette double and serve immediately.
