Herring with sweet-and-sour
A tasty Dutch recipe. The snack is made with the following ingredients: fish, cucumber (peeled), lime (pressed), sugar, herrings and bunched onion (in gossamer rings).

Cut the cucumber into strips and remove the seed lists.

Cut the flesh of the cucumber into tiny cubes.

Heat the limesap with the sugar in a saucepan until the sugar has melted.

Stir this juice through the cucumber cubes, and season with salt and (freshly ground) pepper.

Sprinkle the herring with the spring onions and serve with the sweet and sour cucumber..
