Spinach balls with parmesan
A nice Mediterranean recipe. The snack contains the following ingredients: spinach (a 300 g), white bread (without crust), Parmesan cheese (in pieces), eggs (beaten), nutmeg, garlic (pressed) and olive oil.

Bring a pot of water to the boil and boil the spinach for 2 minutes (blanch). Pour into a colander, let it cool down and push out as much moisture as possible. Chop fine.

Grind the bread and cheese in the food processor. Mix the bread-cheese mixture with the eggs, nutmeg and garlic through the spinach. Add pepper and salt to taste. Turn around 30 balls of the size of a walnut.

Heat the oil in a frying pan and fry the balls around brown in about 5 minutes. Drain on kitchen paper and serve hot or cold.
