Boil the chicken fillet in the broth for about 10 minutes and let the chicken cool for about 30 minutes in the pan. Then pull the chicken apart with 2 forks.

Mix the mayonnaise with the curry, parsley and shallot. Season with salt and pepper.

Stir the chicken through the curry mayonnaise and serve the salad on bread with a piece of rocket.
