Directions

  1. Heat oil to 150 ºC in a fryer (or fryer).
  2. Clean the potatoes and cut lengthwise into coarse pieces, creating large, thick fries.
  3. Rinse the fries in plenty of water a few times to get rid of as much starch as possible (that makes them crispy). Dry thoroughly.
  4. Line a colander with a double layer of kitchen paper. Fries in small portions for 5-6 min., So that they are cooked but not yet colored.
  5. Let the fries drain well in the colander. Heat the oil to 175 ºC. Fry the French fries in small portions for about 3 minutes until golden brown and crispy.
  6. Prepare fries with skimmer in a warm dish, sprinkle with sea salt and shake a few times. Serve immediately.
