Directions

  1. Heat the olive oil in a soup pan, stir in the peas and stir-fry for 1 minute.
  2. Pour 1.5 liters of water and add the bay leaves and 0.5 tablespoon of salt.
  3. Bring the whole to the boil while stirring and boil the peas gently for almost 30 minutes.
  4. Peel the celeriac and then cut into cubes.
  5. Cut the leek into thin rings and finely chop the celery.
  6. Stir in the celeriac, leek and 3/5 tablespoons of celeriac and let the soup simmer for 20 minutes.
  7. Stir frequently so that it becomes a bonded soup.
  8. Cut the smoked sausage into slices and stir in the soup, let the soup simmer for another 5 minutes.
  9. Season the pea soup with salt and freshly ground pepper.
  10. Serve the soup in wide bowls and sprinkle some celeriac into it.
  11. Tasty with rye bread.
