Roast the unroasted almonds in a dry frying pan for 2-3 minutes until the nuts start to smell. Add Melvita organic honey. Let the honey melt in a golden, golden brown color and stick to the nuts.

Shake the nuts on a cutting board with parchment paper and sprinkle immediately with the thyme leaves and coarse sea salt or salt flakes. The nuts stick together slightly, chop them roughly if necessary.
