Hot chicken with cucumber salad

Boil the rice according to the instructions on the package.

Scrape the cucumber into slices or long ribbons. Marinate the cucumber in the wine vinegar and season with (freshly ground) salt and pepper.

Cut the chicken fillet into strips. Season the chicken with (freshly ground) salt and pepper. Heat the oil in a frying pan and fry the chicken strips until golden brown.

Add the soy sauce, ketchup and the water and bring to the boil. Turn down the heat and fry the chicken for 15 minutes.

Stir in the peanut butter until a thick sauce is formed. Season the chicken with the sambal and add the salt.

Let the chicken gently simmer for another 5 minutes. Serve the hot chicken with the rice and the cucumber salad.
