Preheat the oven to 200ºC.

Lay the potato, apple and onion slices together on a baking sheet and sprinkle with the garlic, rosemary needles, (coarse) salt and pepper.

Scoop the oil through and spread everything evenly over the baking sheet.

Roast in the oven for 20-30 minutes and in between shake a few times.

Meanwhile, bake the bacon in a dry, hot skillet until crisp. Let the butter melt gently in the pan with the bacon.

Spoon the bacon over the hot lightning and serve with the mashed potatoes.

Delicious with a green salad of lettuce with a mustard dressing.
