Directions

  1. Mix the rice with the red pepper, ginger, spring onions and shrimps.
  2. Place 1 sheet of filo dough on the work surface and leave the rest under a damp tea towel. Scoop 2 tablespoons of the filling into one of the corners of the dough and roll it up to half.
  3. Fold the dots in on both sides and brush the last piece with egg white to let the dough stick. Roll the dough further into a firm roll and cover with the cloth. Make 7 more rolls.
  4. Heat the frying oil to 180ºC and fry the filo's per 4 pieces golden brown.
  5. Mix the onion rings with the coriander and spread over a bowl. Put the filos on it.
  6. Mix the sour cream with the pepper sauce and lemon juice and serve this sauce for dipping.
