Heat the oil in a soup pan at medium height and fry the garlic. Add the chicken broth, chicken fillet and lemongrass and simmer for 10 minutes.

Remove the chicken fillet from the pan and pull apart with 2 forks. Divide the stock, without lemongrass, over small glasses and add some chicken pieces.

Sprinkle before serving with the coriander and red pepper.
