Hummus burger with grilled eggplant and fetasauce

Ingredients
- 300 gram chickpea
- 1 Red onion
- 2 clove garlic
- 0.5 Red pepper
- 1 teaspoon cumin powder (djinten)
- 0.5 bunch fresh parsley
- 0.5 bunch fresh fresh mint
- 0.5 fresh coriander
- 0.5 egg
- 1 tablespoon flour
- 100 gram Greek yoghurt for the sauce
- 100 gram Turkish yogurt for the sauce
- 1 clove garlic for the sauce
- 2 tablespoon fresh coriander for the sauce
- 50 gram feta for the sauce
- 100 gram Red cabbage for the garnish
- 2 tablespoon Sesame seed for the garnish
- 1 teaspoon balsamic vinegar for the garnish
- 50 milliliters olive oil for the garnish
- Olive oil for the garnish
- 1 eggplant for the garnish
- 1 Turkish bread for the garnish
- 2 tablespoon pomegranate seed for the garnish
Directions

Grind the chickpeas coarsely in a food processor. Spoon into a bowl and hand-mix the rest of the ingredients for the burgers. Season with salt and knead to a compact whole.

Divide the mixture into 4 portions and shape burgers. Leave covered in the refrigerator for about 30 minutes.

In the meantime, mix the ingredients for the sauce and season with salt and pepper.

Mix the red cabbage with the sesame seeds, vinegar, 2 tablespoons of olive oil, salt and pepper.

Heat the rest of the oil in a frying pan and fry the eggplant slices in a few minutes, until golden brown and done.

Brush the burgers with oil and grill them on the barbecue or in a grill pan for about 3 minutes per side until golden brown.

Cut the pieces of bread horizontally and grill the cutting surfaces first on the barbecue.

Cover the bread with a scoop of red cabbage, a burger, a few slices of eggplant and a spoon of fetasauce. Sprinkle with some pomegranate seeds if necessary and put the bread cap on or against it. Serve immediately.
