Hummus burger with grilled eggplant and fetasauce

Directions

  1. Grind the chickpeas coarsely in a food processor. Spoon into a bowl and hand-mix the rest of the ingredients for the burgers. Season with salt and knead to a compact whole.
  2. Divide the mixture into 4 portions and shape burgers. Leave covered in the refrigerator for about 30 minutes.
  3. In the meantime, mix the ingredients for the sauce and season with salt and pepper.
  4. Mix the red cabbage with the sesame seeds, vinegar, 2 tablespoons of olive oil, salt and pepper.
  5. Heat the rest of the oil in a frying pan and fry the eggplant slices in a few minutes, until golden brown and done.
  6. Brush the burgers with oil and grill them on the barbecue or in a grill pan for about 3 minutes per side until golden brown.
  7. Cut the pieces of bread horizontally and grill the cutting surfaces first on the barbecue.
  8. Cover the bread with a scoop of red cabbage, a burger, a few slices of eggplant and a spoon of fetasauce. Sprinkle with some pomegranate seeds if necessary and put the bread cap on or against it. Serve immediately.
