Heat the oil and fry the bacon for 4 minutes on both sides at medium height. Remove the bacon from the pan and add the onion, garlic, ginger and lemongrass to the shortening.

Bake for about 3 minutes and add the tomatoes, ketjapmarinadeen coconut. Add the bacon with 200 ml water to the pan and cover for 20 minutes at a low setting.

Serve the stew with the paprika-sambal puree (see tip recipe) and sprinkle with the spring onions.
