Mix the oil, to, basil, garlic and a pinch of salt into a pesto in a food processor.

Cut open the bread and brush with the pesto on both sides. Cover the ciabatta with the arugula, mozzarella and peppers.

Cut the bread into equal pieces and wrap in a piece of baking paper.
