Italian puree


A tasty Italian recipe. The side dish contains the following ingredients: potatoes (crumbly), garlic (peeled), olive oil, Parmesan cheese (grated), green olives (without pit (a 240 g), halved), capers ((jar 100 g) and drained).

Directions

  1. Peel the potatoes, cut them into pieces and boil them for 20 minutes in water with salt. Drain, put back in the pan and leave with the lid on for 10 minutes.
  2. Hang a ball sieve in another pan and rub the potatoes and garlic through the convex side of a spoon. Heat the oil for 1 minute and pour 80 ml of it into the potato. Add the cheese and turn into an airy puree. Season with salt and pepper.
  3. Put the rest of the oil in a bowl and stir in the olives and capers. Pour over the puree.
