First, cut thick filet slices horizontally in half. Roll out the fillet steaks between two pieces of cling film.

Mix some salt and pepper through the flour and lightly lighten the meat. Heat the oil with 2 tablespoons butter and fry the meat lightly brown on both sides.

Remove the meat from the pan and add the wine, lemon juice, grater and the rest of the butter. Season with salt and pepper.

Add the parsley as soon as the butter has melted. Put the meat back in the pan and gently heat for 2-3 minutes. Serve with slices of lemon.
