Cook the potatoes with salt until about 20 minutes.

Heat 1 tablespoon of olive oil and fry the salami and onion for about 2-3 minutes. Spoon the spinach through and let it shrink slightly.

Drain the potatoes and make a puree with the rest of the olive oil, salt, pepper and pesto.

Spat the spinach mixture through the mashed potatoes. Serve the stew with the gorgonzola on it.
