Italian summer soup with balls


Meal soup with leeks, cannellini beans, meatballs, string beans and lemon

Directions

  1. Slice the garlic and heat the oil in a soup pan. Fruit the leek and the garlic 1 min.
  2. Add the vegetable stock, beans and beef balls and bring to the boil.
  3. Cook gently for 10 minutes on low heat. Add the beans for the last 5 minutes.
  4. Meanwhile, grate the yellow skin of the lemon and finely chop the parsley. Mix with oil and garlic, lemon zest and parsley (gremolata).
  5. Season the soup with pepper and salt. Serve with the gremolata.
