Japanese zalmyakitori with crispy vegetable noodles
Salmon skewers with a mix of noodles, fresh ginger, honey, garlic and cucumber.

Peel and grate the ginger and put the soy sauce, mirin and honey in a saucepan. Press the garlic above it.

Bring the yakitori sauce to the boil, reduce the heat and let it simmer for 15 minutes. Stir occasionally.

Meanwhile, cut the salmon into 2 x 2 cm cubes and baste the satéprikkers.

Halve the cucumber in the length and remove the seed lists with a teaspoon. Cut the flesh into thin strips (julienne).

Boil the noodles according to the instructions on the packaging, drain and put back in the pan.

Add the cucumber, carrot and sesame oil. Spoon around and let stand with the lid on the pan.

Brush the salmon skewers with sauce. Heat the grill pan and grill the skewers in 2-3 min. Rosé. Turn every 30 seconds. and brush with the sauce over and over again.

Serve the noodles with the salmon skewers and drizzle with the rest of the yakitori sauce. Yummy! .
