Dab the shellfish thoroughly dry with a piece of kitchen paper (otherwise they will not be nice in color).

Sprinkle salt and pepper over the shellfish and place in a pan with hot peanut oil.

The shellfish have to caramelize a little (do not burn), but you can not stir them at all. How do you manage that? You wait a few minutes and by the time you think they are done you can lift one.

If the bottom looks golden brown, turn them all over.

Put a knob of butter on top, let them brown on the other side and add some extra butter.
