Kale soup with sausage

Chop the onion. Peel the potatoes and cut them into cubes of 1 cm. Heat some olive oil in a soup pot and gently fry the onion. Bake in the potato cubes and kale for 2 minutes.

Add 1 liter of water and 1-2 teaspoons of salt. Bring the soup to the boil while stirring. Let it boil gently for 20-25 minutes until it becomes a light-tight soup. Season with salt and freshly ground pepper. If necessary, add some more water if the soup is too thick.

Slice the smoked sausage into slices. Bake the slices in a hot grill pan for 4-6 minutes until they have nice brown stripes. Turn the slices after 2-3 minutes. Serve the kale soup with the cottage cheese in the middle. Place the slices of sausage in it.
