Heat the caster sugar with 250 ml of water. Add the ginger root and cook for 1 minute. Allow to cool. Strain the mixture.

Purée 5 peeled kiwis and add them (possibly sieved to remove the seeds) at the syrup.

Stir well and pour the mixture into the molds. Freeze 3-4 hours.
