Lemon chicken with parsley and mint
A delicious Mediterranean recipe for lemon chicken with parsley and mint.

Heat the oil and brown the chicken on all sides. Scoop the chicken parts with a slotted spoon from the pan.

Add the ginger, pepper and garlic to the shortening and fry for 1 minute.

Stir in curry, cumin, coriander, salt and cayenne pepper to taste and heat for 1 minute.

Put the chicken back in the pan, add the stock, the lemon juice and the rack.

Bring everything to a boil and let the chicken gently simmer for 25 minutes with the lid on the pan. Stir in the parsley and fresh mint.

Serve the chicken with leaves of fresh mint and slices of lemon.
