Spread the convex side of half of the cookies with the mascarpone. Place 3 raspberries on each biscuit.

Spread the flat side of the leftover biscuits with leces and lay them down on the raspberries with the buttered side down.

Place the cookies on a cake platter or etagere and sprinkle with icing sugar. Garnish with the anise cress and serve.
