Lentil soup with celery, carrot, parsley and beef smoked sausage.

Chop the onion, cut the carrot into slices and squeeze out the garlic.

Slice the celery.

Heat the olive oil in a thick-bottomed pan. Fry the onion and the garlic.

Add the celery and carrot and cook for 5 minutes, stirring.

Add the lentils and pour in the stock. Add the bay leaf and the clove and let it simmer for 40 minutes.

Meanwhile, cut the potatoes into pieces.

Add the pieces of potato after 20 minutes of gentle cooking.

Squeeze out the lemon. Finally, make the lentil soup to taste with the juice of the lemon and (freshly ground) salt and pepper.

In the end, heat the sausage in the soup. Then remove the sausage from the soup, cut it into pieces and spread it over the bowls.

Slice the parsley. Pour the lentil soup over the sausage and garnish with the parsley.
