Lentils and rice with curry cauliflower and fried mackerel
Fast and healthy dish with lentils and rice, cauliflower, mackerel fillet, curry madras, carrot julienne and lemon.

Cook the lentils and rice according to the instructions on the package.

Cut the cauliflower into florets and cook for 5 minutes.

Heat the oil in a frying pan with non-stick coating and fry the mackerel in 2 min. Per side brown and cooked.

Heat the rest of the oil in a wok or frying pan with the curry madras and stir fry the cauliflower florets 2 min.

Stir the carrot julienne through the lentils and rice. Clean the lemon and grate the yellow skin of the lemon above the rice. Cut the lemon into wedges.

Serve the lentils with rice and carrot with cauliflower, mackerel and lemon wedges.
