Vegetarian recipe for lentils with ratatouille mix, hot curry, coriander, bay leaf and coriander.

Directions

  1. Wash the lentils in a colander under cold running water. Bring the water with bay leaf and 1/2 tsp salt to a boil in a pan. Cook the lentils for about 25 minutes. Stir well on occasionally.
  2. Meanwhile, heat the oil in a wok or large frying pan. Bake the vegetable mix while you are still shoving. Stir in the curry and coriander with the cinnamon and cook for approx. 1 min. Add the water and lemon juice. Cook the vegetables for about 5 minutes.
  3. Stir the lentils through the vegetables and heat for another 5 minutes. Season to taste with salt. Remove the bay leaves. Cut the coriander into pieces above it.
