Put the butter, sugar and flour in the food processor and mix into dough crumbs.

Remove the crumbs from the bowl and knead briefly into a cohesive dough ball. Pack in cling film and let the dough rest for 60 minutes in the refrigerator.

Preheat the oven to 175 ° C. Sprinkle the worktop with some flour and roll out the dough with the rolling pin into parts of 3-4 mm thick.

Put letters out of the dough with the protrusions.

Knead the leftover dough into a ball and put it back in the fridge wrapped in foil.

Place the cookies with a few centimeters in between on a baking sheet covered with parchment paper.

Bake in the oven for about 8 minutes. Allow to cool. Repeat with the rest of the dough.

Spread the icing sugar over 3 cups.

Put in the first bowl a ½ tsp beet juice and 1 tl water, in the second bowl 1 tsp beet juice and a ½ tl water and in the third bowl 1½ tl beetroot juice.

Stir the glaze well in the containers until a smooth, thick and smooth glaze has formed.

Spoon the glaze over the letter cookies with a teaspoon or skewer.
