Linguine with chorizo, tomato and goat cheese
Italian pasta recipe with linguine, chorizo, cherry tomatoes, red pesto and goat's cheese.

Cook the pasta according to the instructions on the package.

Chop the onion, cut the chorizo into cubes, halve the tomatoes and divide the goat's cheese into pieces.

Heat the oil in a frying pan and fry the onion and chorizo for 4 minutes. Add the tomatoes and cook for 5 minutes. Keep warm on low heat.

Drain the pasta and collect a cup of cooking liquid. Mix the linguine with the pesto and some cooking water through the tomato mixture.

Add the cheese and the rocket and gently cover. Season with pepper.

Spread the pasta over the plates and sprinkle with the goat's cheese and the rocket.
