Little gem salad with tomato dressing
A tasty Spanish recipe. The vegetarian starter contains the following ingredients: tomatoes, garlic, olive oil (extra virgin), lemon juice, salt, pepper, spring onions, little gem (lettuce) and black olives without pit.

Dip tomatoes, dip for a few seconds in boiling water, rinse under cold water, skim, halve, remove seeds and cut tomatoes into cubes. Garlic peel and chop. Mix the tomatoes and garlic in a food processor or with a hand blender. Mix in oil and lemon juice. Season dressing to taste with salt and pepper and refrigerate until used.

Clean the forest onions and cut them into slanted rings. Cut headlets little gem into four parts in length. Place salad on four flat plates and pour tomato dressing over it. Add rings of spring onions and olives over salad. Serve with warm bread.
