For the dressing mix the mayonnaise with the apple cider vinegar, coarse mustard, mustard powder, honey and pepper and salt to taste.

Cut the red and white cabbage finely, chop the onion, cut the carrot julienne or grate it and finely chop the parsley.

Mix the red cabbage, white cabbage, red onion, carrot and parsley together in a salad bowl. Mix in the dressing.
