Cut the spring onion into rings. Cut the parsley leaves fine and the olives in four.

Leak out the lentils in a sieve. Spoon the lentils, spring onions, parsley, olives and capers in a microwave dish.

Season the lentils with the dressing, pepper and salt. Divide the lettuce over large plates and scoop the lentil salad in the middle.
