Squeeze out the orange. Boil the juice in a wokkentot half. Beat in the mustard and oil and season with salt and pepper.

Spoon the spinach and heat everything for 1 min. Transfer the slightly shrunken spinach with the dressing into a bowl.

Roast the almonds in a frying pan without oil or butter until golden brown. Cool slightly and chop roughly. Sprinkle the almonds over the salad.
