Heat the sugar with 100 ml of water until the sugar is dissolved. Mix this sugar syrup with the mandarin and lemon juice and stir well.

Pour this mixture into a wide, shallow freezer and put in the freezer for about 1 hour. Stir the mixture well every half hour until after about 2.5 hours beautiful ice crystals are formed and everything is frozen.

Spoon the granita into cocktail glasses, pour the prosecco and serve immediately.
