A tasty Dutch recipe. The snack contains the following ingredients: fish, fresh Zeeland mussels (2 kg), olive oil, fresh flat parsley (finely chopped) and white wine vinegar.
Wash the mussels under the running tap; discard broken and opened ones (which do not close after a tap on the counter).
Heat 2 tbsp olive oil in a lockable pan.
Add the mussels, turn down the heat and steam the mussels with the lid on the pan in about 5 minutes.
Shake the mussels and scoop them out of the pan.
Stir in the remaining olive oil, parsley and vinegar.
Season with (freshly ground) salt and pepper.
Drip the parsley oil over the mussels..
