Directions

  1. Let the chicken come to room temperature. Remove the elastic that holds the legs together. Bring a large pan to the boil and immerse the chicken in the boiling water for 3 minutes. Drain and pat dry. Make a marinade of 50 ml water, honey, soy sauce, sherry and vinegar. Brush the chicken and leave uncovered for 3 hours in a cool, dry place. Keep the marinade.
  2. Preheat the oven to 240 ° C. Brush the chicken again with the marinade and with the oil. Place the chicken with the breast upwards on a grid. Fill a roasting pan with hot water and place it on a grid at the bottom of the oven. Put the grid with the chicken on the roasting pan. Roast the chicken 15 min. Turn the chicken and set the oven to 175 ° C. Roast in approx. 1 hour until tender and crispy.
  3. Check regularly for doneness. Remove the chicken from the oven and cover with a lid or aluminum foil and leave to rest for 15 minutes before cutting the chicken.
