Saute the courgette with a cheese slicer or peeler in thin ribbons.

Grate 1 teaspoon of the orange peel and cut the rest of the peel around thickly so that the flesh remains. Cut out the segments between the membranes. Do this above a large scale and collect the juice.

Beat the grated orange peel, mustard, vinegar and olive oil through the juice and season with salt and pepper. Put in the zucchini ribbons, orange slices, beans, olives and basil and leave to withdraw.

Heat a grill pan (if necessary, lightly). Dab the meat dry and grill it at medium height in about 4 minutes on both sides.

Serve the meat with the salad.
