Martijn pimped spinach pancakes


A tasty Dutch recipe. The main course contains the following ingredients: fish, flour, eggs, milk, oil, garlic (chopped), onion (finely chopped), spinach (fresh (300 g)), smoked salmon pieces (200 g), fresh dill ((bag of 15) g) cut) and crème fraîche.

Directions

  1. Stir flour, eggs, milk and 1/4 teaspoon of salt in a large bowl until smooth.
  2. Let the batter rest for a while.
  3. Heat 1 tablespoon of oil in a frying pan and fry the garlic and the onion in a gentle heat until they are glazed.
  4. Spoon the spinach through the onion-garlic mixture.
  5. Stir the spinach mixture through the pancake batter and puree it with the hand blender or in the food processor.
  6. Heat 1 tablespoon of oil in a large frying pan and fry a pancake on medium to high heat.
  7. Repeat this three times.
  8. Keep the already baked pancakes warm under aluminum foil.
  9. Put the pancakes open on the counter, spread the salmon pieces and the dill over it and season with salt and pepper.
  10. Put the pancakes on plates and fold them up.
  11. Scoop the crème fraîche on the plates and serve immediately..
